When Pooja Bavishi made the decision to launch her ice cream business, Malai, she was able to do so with an unambiguous, personal view. "I started Malai in order to highlight the flavor that I grew up eating as a first generation Indian American in a popular and mainstream fashion," she says.

"Everyone is a victim of an ice cream memories from childhood and the majority of them are associated with visiting an ice cream shop in the neighborhood shop for a treat and a cup of ice cream with beloved family members," Pooja says. This nostalgia-infused fusion has taken Malai from being a stand-in in markets and local food halls to grocery store freezers and pop-up carts all over New York City, and an enticing flagship shop located in Brooklyn providing both local and national delivery.
